This is the basic pancake recipe that I work with when preparing pancakes for my family. Often times, I will add in a variety of “extras” to mix things up a bit (i.e. pumpkin, cinnamon, vanilla, cardamom, dried fruit, nuts, cacao nibs, mini chocolate chips, etc). But here is the basic recipe that I usually work from:
My “Secret” Pancake Recipe

Ingredients
- 1 cup whole wheat flour (or buckwheat flour)
- 1 cup almond flour
- 3/4 cups oats (or ground into oat flour)
- 1/4 cup flax seeds, ground
- 3 teaspoons baking powder
- 1/2 teaspoon sea salt
- 1 scoop protein powder, optional
- 2-3 eggs
- 1 tablespoon olive oil (or coconut oil)
- 1 cup almond milk (unsweetened)
- 1 cup warm water
Instructions
- Heat griddle to medium heat (not high when cooking with almond flour).
- In a large bowl, mix all the dry ingredients.
- In a separate bowl, mix all the wet ingredients.
- Add the wet ingredients to the dry ones and mix well.
- Adjust batter to desired consistency with water or flour if needed.
- Cook pancakes.
- Top with maple syrup, nuts, fresh berries, berry compotes, yogurt, toasted coconut, or any healthy topping your little heart desires. Just try to skip the Log Cabin!
